Our Chickens
The birds that are grown at Katissa Poultry have a much longer growing cycle than most birds which gives them a wonderful flavor and texture. There is a high meat to bone ratio on the birds because of the length of growth making them a good value, the meat goes a long way and will feed a lot of people. The length of grow significantly cuts into the profit margin but my opinion is that it makes the chicken so much more tasty that it is worth the cost. There is a lot of attention given to cleanliness for the birds. When the chicks arrive at the farm the barn is all sanitized and clean, the floor sawdust is put in brand new. When it is processing time the catching crew is paid extra to take more time and handle the birds gently when transporting to the processing plant. The birds are processed, air-chilled and cyrovaced at Farm Fed, and are “halal” processed. There is no water weight added to the birds when they are air chilled.
All of the animals at Katissa Poultry are fed with a non-medicated, no animal by-products, all-veggie feed of the highest quality. The farm is certified by CFC’s Safe, Safer, Safest Program.
Due to the small production at Katissa Poultry there is only fresh chicken available when the birds are processed. The fresh chicken date is always posted on the FrontPage of the website. There is very special care taken at Katissa Poultry when it comes to handling the fresh chicken. The chicken is sold fresh for three to four days and immediately frozen in the walk in freezer located on the farm. This gives the consumer more shelf life from the chicken when they go to thaw and use it. The chicken cut-ups (whole legs, drums, thighs, whole breasts bone-in, boneless skinless breasts and wings) are offered at 10% less when it comes back from processing re: fresh chicken date. This discount is conditional to the chicken being bought by the case and wrapped by the customer. This discount can be offered due to the fact that it saves handling and cold storage costs for the farm. The cases are approximately 40 lbs.each for each item. There is an opportunity to save some money by buying the birds fresh and cutting them yourself. I have a customer e-mail base, there is a bulk e-mail sent to the customers 2 weeks prior to fresh chicken arrival. Your orders need to be sent or called to me one week before fresh chicken date; I have to give the cut-up orders to Farm Fed by then. I have been asked my opinion about organic production versus all-veggie fed, non-medicated, no-animal by-products production. I love the diet that I have my birds on and my customers seem to agree with that. I never get tired of hearing from them what great tasting chicken they get at Katissa Poultry. I have also been asked if my birds free range. The answer is no, in my experience free range chicken is only possible in very small numbers when there is ample grass cover to supply the chickens without creating a mud hole that they will very happily drink dirty contaminated water from and become ill. I allow 2 square feet per bird in the barn which gives them ample space to move and be happy. They are well ventilated with exhausting fans for fresh air. I have found broiler chickens to be very social, easy going, happy creatures when treated fairly. I love watching them grow and thrive under my care.
